Mathanga Errisery (Pumpkin Curry)

INGREDIENTS

Pumpkin(Mathanga) – 1 cup
Coconut(grated) – 5 tbsp
Cumin seeds(Jeerakam) – 2 pinchs
Red chilly powder – 1/4 tsp
Turmeric powder – a pinch

Coconut oil – 1 tbsp
Coconut (grated) – 1 tbsp
Mustard seeds – A pinch
Dry red chilly(Kollamulaku) – 1 no
Curry leaves – 1 stalk
Salt – To taste

Method

1)Grind together grated coconut, cumin seeds and red chilly powder into a fine paste.Keep it aside.

2)Cook pumpkin along with salt, turmeric powder and water, until half done.

3)Add the ground paste and cook well and Remove from fire

4)Heat coconut oil in a kadai or a pan.

5) Add the mustard seeds, curry leaves and red chilly.

6) When it starts to splutter, add the grated coconut and fry it until it turns brown.
be carefull that the grated coconut is not over fried.

7) Add the seasoning to the cooked Curry and serve it hot.

:- Serve with hot rice and papadam.
:- Erissery can also be made with green bananas, bread fruit, green jack fruit etc.
:- You can even add Green chilly for improving the taste.

Veg Paneer Masala

A treat for All Vegetarians and those who hates vegetables.

INGREDIENTS

1) Paneer – 10 to 15 nos
2) Chilly Powder – 1 tsp
3) Onion – 1 medium size
4) Ginger/Garlic Paste – 1/2 tsp
5) Cilantro – 6 or 7 springs
6) Kasoori Methi – 1 tsp
7) Coriander powder – 1/2 tsp
8) Chicken Masala – 1/4 tsp
9) Garam Masala – 1/4 tsp
10) Turmeric Powder – 2 pinch
11) Cashew Nuts – 10 nos
12) Oil – 3 tbsp
13) Tomato – 1/2 no
14) Grated Coconut – 1/4 cup
15) Salt – to taste
16) Green Chilly – 2 nos
17) Sesame Seeds – 3 tsp
18) Tomato Ketch up – 1 tsp
19) Vegetable Mix – 1 cup (Can contain Brocoli, CauliFlower, Carrots etc Can choose vegetables as ur wish)

METHOD

1) Heat the pan, pour 1 tbsp of oil.
2) Add the half of the sliced onion into the hot oil,allow it to turn transparent colour.
3) Add the sliced green chillies, ginger garlic paste , grated coconut, cashew nuts, Sesame Seeds, tomato and saute it well for about 2 mins.
4) Add chilly powder, turmeric powder,coriander powder, chicken masala and allow it to cook well and a nice aroma comes out.
5) Add more oil if you feel its necessary and add kasoori methi, Cilantro and salt to taste.
6) Add the Cut vegetables to it and fry it till the masala mix up well with the veges. When the above masala is cooked well and starts emitting nice aroma, Grind Vegetable masala mix into a fine paste.
7) Add the rest sliced onions ,when it turns to slight brown colour, add the grounded masala mix .
8) Add the fried paneer into the masala and allow it to cook well with the masala.
9) Stir it for 5 to 6 mins and serve it.

:- Garnish it with Kasoori Methi or with Cilantro or with Crispy Cornflakes. Garnishing is upto your ideas.

:- Serve it along with Rice, Chapathi,Nan etc.

Mushroom Masala

INGREDIENTS

1) Bell Mushroom – 12 nos
2) Chilly Powder – 1 +1/2 tsp
3) Onion – 1 medium size
4) Ginger/Garlic Paste – 1/2 tsp
5) Cilantro – 6 or 7 springs
6) Kasoori Methi – 1 tsp
7) Coriander powder – 1/2 tsp
8) Chicken Masala – 1/4 tsp
9) Garam Masala – 1/4 tsp
10) Turmeric Powder – 2 pinch
11) Oil – 3 tbsp
12) Tomato – 1/2 no
13) Grated Coconut – 1/4 cup
14) Salt – to taste
15) Green Chilly – 2 nos
16) Potato (slice it to very small pieces) – 1/2 no (Optional)
17) Mustard Seeds – 1/2 tsp
18) Pepper Powder – 1/2 tsp

METHOD

1) Cut the Bell Mushroom into bite size pieces.Heat the oil in a pressure pan.
2) Splutter the mustard Seeds and Add the the sliced onion into the hot oil,allow it to turn transparent colour.
3) Add the sliced green chillies, ginger garlic paste , grated coconut, tomato and saute it well for about 2 mins.
4) Add chilly powder, turmeric powder,coriander powder, chicken masala ,Pepper Powder,Garam masala and allow it to cook well and a nice aroma comes out.
5) Add more oil if you feel its necessary and add kasoori methi , cilantros and salt to taste.
6) When the above masala is cooked well and starts emitting nice aroma,
7) Add the Mushroom pieces and small potato pieces into the cooked masala allow it to fry along with the masala .
8) Pressure cook the mushroom masala mix till one whistle is heard.
9) When the mushrooms are cooked well you can smash the cooked potatoes for getting thickness to the curry and serve it in a serving pan.

:- Garnish it with Kasoori methi or with Cilantro’s
:- Serve it along with the Rice, Chapathi,Nan etc.

:- You can even add little Tomato ketchup,Cashew nuts, to improve the taste.

Baked & Stuffed Mushroom

7) Cut the Bell Mushroom slightly through its bottom part but dont separate it.
8) Dip the Bell Mushroom into the masala and stuff the masala in between the cut pieces of the Bell Mushroom and restore its shape for presentation.
9) Bake the Stuffed mushroom in a 350 deg Celsius preheated oven for about 20 to 30 mins.
10) When the mushrooms are cooked well you can take out and fry the baked mushrooms in another without spoiling its shape for about 5 to 10 mins.

:- Serve it along with the Rice, Chapathi,Nan etc.
:- You can avoid frying the baked mushroom if you wish, but after frying it will be more tasty.

Mixed Vegetable Stir Fry.

INGREDIENTS (Nutrition)

Brocolli – 1/4 cup
Carrot sliced – 1/4 cup
cauliflower – 1/4 cup
Cornstarch – 2 tsp
Teriyaki Marinade sauce – 6 tbsp
Brown sugar – 5 tbsp
can add more if u need the dish to be more sweet
Garlic/Garlic paste – 1/2 tsp
Grated Apple – 3 tbsp
Pepper Powder – 1 tsp
Grape/Cherry wine (Red Wine) – 1/4 cup
Salt – to taste
Oil – 1 tsp

DIRECTIONS

1. In a mixing bowl, combine the cornstarch, teriyaki sauce, brown sugar and ginger/garlic paste,sugar. Mix thoroughly.

2. Boil the mixture in a saucepan and stir it well till the sauce gets thicken. Add wine and stir it again and add the grated apple pieces and pepper powder. Cook until mixture boils and thickens, stirring frequently. Allow it to cool.

3. In a large skillet or frying pan, over medium/high heat, pour oil and saute the Cut vegetables until raw taste goes off.Don’t let fresh colour of the vegetables go off during frying.

4. Add half of the cooked sauce to fried vegetables and cook it till the pieces gets a nice glazing to it.

:- Sauce is similar for Chicken and Beef Teriyaki.
:- You can add any sliced vegetables you like for the stir fry.

Note :- U can add Sugar or Brown Sugar to increase the sweetness.Keep on tasting the sauce to check the sweetness.You can even add 1/4 tsp of chilly powder to get ur dish a little hot.

Honey Brocoli Stir Fry

INGREDIENTS

1) Broccoli – 1 stem or 1/2 kg
2) Soy Sauce – 2 tbsp
3) Cornflour – 1+1/2 tsp
4) Ginger Paste – 1/4 tsp
5) Honey – 2 tbsp
6) Sugar – 1 tsp
7) Pepper powder – 1/2 tsp
or hot pepper sauce if available
8) Oil – 3 tbsp
9) Salt to taste

METHOD

1) Wash broccoli and cut off broccoli flowerets.

2) Slice stems 1/4 inch thick lengthy pieces.

3) Heat oil in a pan ,stir-fry broccoli 5 minutes until crisp-tender.

4) In small bowl, mix soy sauce and cornflour and 4 tbsp water.

5) Add honey, ginger paste and pepper powder or hot pepper sauce.

6) Pour the above prepared mixture over fried broccoli and add salt.

7) Cook until sauce thickens slightly.

:- Dont add too much salt because its a sweet dish. You can add more Sugar or Honey if u need ur dish to be more sweet.

:- This dish will go fine with Chinese White Rice.

Kadala Curry

INGREDIENTS

Kadala – 1 cup
Ginger/Garlic paste – 1/2 tsp
Onion – 2 nos
Coriander powder – 1 tsp
Chilly Powder – 2 tsp
Chicken Masala powder – 1/2 tsp
Garam Masala Powder – 1/4 tsp
Turmeric Powder – 1/8 tsp
Salt – to taste
Tomatoes – 1 nos
Corriander Leaves – 1 stem
Mustard Seed – 1/2 tsp
Oil – 1 tbsp

METHOD

1) Cook channa with salt in a pressure cooker.

2) Heat oil in a pan,sputter mustard Seeds.

2)Add ginger and garlic paste and stir till brown.

3)Add chopped onions and stir, till onions are cooked.

4)Add coriander powder,Turmeric Powder,garam masala powder,Chilly Powder,Chicken Masala powder and stir, till the smell of masala powder comes out.

5)Add chopped tomatoes stir well, till the tomatoes blend well.

6)Add the cooked channa or Kadala to the masala.

7)Add salt and stir well.

8)You may add more water, if required.

9To make the gravy thick add corn starch to the curry this is optional.

Easy method for cooking Kadala

1) Cook the Channa along with all the ingredients in a pressure cooker and when the gravy become thick.

2) Add the sputter mustard seeds and fried Onion to the Curry as garnishing.

:- Serve it after garninshing with curry leaves or cilantros.

:- This dish will go fine with Puttu,Appam,Palappam,Iddiyappam etc.

Carrot Thoran

INGREDIENTS

1) Carrot – 3 Nos
2) Grated Cocconut – 1/2 Cup
3) Chilly Powder – 1/4 tsp
4) Cumin Seeds – 1/2 tsp
5) Mustard Seeds – 3/4 tsp
6) Green Chilly – 5 nos
7) Turmeric Powder – 4 pinch
8) Shallots – 5 nos
9) Garlic Pods – 4 nos
10) Curry Leaf – 1 stem
11) Oil – 2 tsp
12) Salt – to taste

DIRECTIONS

1) Heat the oil in a pan. Add mustard seeds ,allow it to splutter.

2) Add the finely chopped Carrot to the oil.Saute it for about 5 minutes.

3) Grind the Grated Coconut,turmeric powder,cumin seeds,Garlic Pods,Green Chilly,Shallots and Chilly Powder in another pan.

4) Add the grinded mixture to the Carrot in heating pan.

5) Add 1/4 cup of water to the pan and saute it well for about 2 mins and close the pan with a lid and leave it for about 15 mins.

6) Add the curry Leaves.

7) Stir well till all water evaporates.

:- Serve the dish after garnishing with Curry Leaf Stem.

This dish will go fine with Rice.

Sambar

INGREDIENT

Red gram(Thuvaraparippu) – 1/4 cup

Vegetables

Tomatoes – 1 nos
Potato (sliced) – 1 nos
Raw Banana (sliced) – 1/4 cup
Onions(sliced) – 1 nos
Drumstick – 6 pieces
Carrot (sliced) – 1 nos
Brocoli – 1/4 cup
Beans – 1/4 cup

Powders

Turmeric powder – 1/4 tsp
Salt – to taste
Tamarind(Puli) juice – 1 tsp
Sambar masala powder – 3 +1/2 tsp
Chilly Powder – 1+1/2 tsp
Coriander Powder – 1/2 tsp

For seasoning:

Oil – 3 tbsp
Mustard seeds – 1 tsp
Shallot – 3 nos
Asafoetida(Kayam) – 2 pinch
Curry leaves – A few
Coriander leaves – 1 stem

1)Cook red gram along with the Asafoetida in a pressure cooker and . Keep aside.

2)Add the Sliced Vegatables and allow to cook.

3)Add the Sambar powder,chilly powder,coriander powder and turmeric powder and stir it without damaging the cooked vegetables and add tamarind juice and boil for some more time.

4)Add salt to taste.

5)Heat oil in a pan.

6)Add the mustard ,allow it to splutter,then add shallots allow it to turn brown add curry

leaves.

7) Add the above mustard shallot mix into the sambar

8)Garnish with cut coriander leaves.

Ingi Puli

INGREDIENTS

Tamarind(Puli) pulp – 2 cups
Turmeric Powder – a pinch
(soak tamarind in water and extract pulp)
Ginger – 1 inch piece
Slice the ginger into small pieces.
Scraped Jaggery – 1 cup
Salt – to taste
Mustard seeds – 1/2 tsp
Red chilly powder – 2+1/2 tsp
Thinly Sliced Coconut – 1/2 cup
Oil – 1 tbsp

METHOD

1)Heat a Pot.

2)Saute red chilly powder for 2 minutes let the raw smell goes off .

3)Add the tamrind pulp,Turmeric Powder,salt and allow the mixture to boil for about 5 minutes.

4)At the same time fry the sliced ginger in 1 tsp of oil and grind the fried ginger pieces.

5) Also fry the thinly sliced coconut nicely in the same pan. Keep the fried coconut pieces aside.

6)Add the fried ginger paste to the boiling mixture, and add the scraped jaggery and stir it well.Allow it to cook till the mixture thickens.Also add the Fried Coconut pieces to the boiling mixture.

7)Heat the oil in a pan and Splutter the mustard seed and add it to the above mixture.

:- This dish will go fine with Rice,Biriyani.
