INGREDIENTS

Beef – 1/2 Kg
soy sauce – 1 tbspn
vinegar – 1 tbspn
Ginger garlic paste – 1/2 tspn
Coriander powder – 1 tspn
Chilli powder – 2 tspn
garam masala – 1/4 tspn
turmeric powder – 1/4 tspn
Corn flour – 1 tbspn
Salt – to taste
Oil – 4 to 5 tbsp
Kasoori Methi – few for Seasoning
Green chillies – 4 nos
Onion – 1 no

METHOD

1) Heat a pan ,add 1 tsp oil .

2) Add the beef pieces and turmeric powder.The beef will leave water and till it changes its texture and colour up within few mins .Saute it medium Flame ,for about 5 to 10 mins .

3) For Marinating the partially fried beef pieces ,add ginger/garlic paste, soy sauce,vinegar,coriander powder,garam masala powder,chilli powder,salt mix it properly along with the beef pieces and leave it for atleast 30 mins .

4) Cook the beef pieces in a pressure cooker for about 5 minutes. Add the corn flour and saute it well.

5) Heat oil in a frying pan, add the sliced Onion and sliced green Chillies ,saute it till it turns brown and add the cooked beef .Saute it till it turns dry.

:- Serve it hot.

INGREDIENTS

Prawns – 20 (medium)
soy sauce – 1 tbspn
vinegar – 1 tbspn
Ginger garlic paste – 1/4 tspn
Coriander powder – 1/4 tspn
Chilli powder – 1/4 tspn
garam masala – 1/4 tspn
turmeric powder – 1/4 tspn
Corn flour – 1 tbspn
Egg white – 1 no
Salt – to taste
Oil – 4 to 5 tbsp

For seasoning

Curry leaves – few
Green chillies – 2 to 3

METHOD

1) Heat a pan ,add 1 tsp oil .

2) Add the prawns and turmeric powder.The prawns will leave water and will get coiled up within few mins .
Saute it until the water dries up in a medium Flame.

3) For Marinating the prawns ,add ginger/garlic paste, soy sauce,vinegar,coriander powder,garam masala powder,chilli powder,salt mix it properly along with the prawns and leave it for atleast 30 mins .

4) Mix the egg white and corn flour to the prawns and leave it for 5 mins

5) Heat oil in a frying pan, fry the prawns .

6) When the prawns are almost fried,heat abt 1/4 tspn of oil in to the pan and add the curry leaves,sliced Onions and the green chillies cut lengthwise saute for few secs .

:- Serve it hot.

Kottayam Style Beef Fry

INGREDIENTS

Beef – 1/2 kg
Shredded onions – 1 no
Green chilies(split) – 5 nos
Ginger/Garlic Paste – 1/2 tsp
Garlic pods(chopped) – 4 nos
Garam Masala – 1/2 tsp
Cumin Seeds – 1/2 tsp
Black pepper seeds – 5 nos
Turmeric powder – 1/8 tsp
Sliced coconut – 1/4 cup
Curry leaves – 2 stems
Lemon juice – 1/4 lemon Or 2 tsp
Black pepper powder – 1 tsp
Chicken Masala Pwdr – 1/4 tsp
Chilly Powder – 2 tsp
Oil – 2 tsp
Salt – To Taste

METHOD

1)Marinate the beef pieces in lemon

juice,Salt,chilly powder,Crushed Black Pepper and

Black Pepper powder,Garam Masala,1/4 tsp of

Ginger/Garlic paste . Mix all the ingredients

well and keep for about 10 -20 minutes.

2)Cook the marinated beef with all the masala in water.When the beef is cooked keep it aside.

3)Heat the coconut oil in a frying pan and add chopped onions and saute till brown.

4)Add Garlic pods,sliced green chilly,ginger garlic paste,Chicken masala and saute it till the raw taste is gone.

5) Then add the cooked beaf to it and cook it in low flame till its dry .Dont drain the masala

mixed water.

6)Add curry leaves and saute till brown.

7)Add the powdered black pepper.

8)Saute it slowly until it turn dark.

:- This dish will go fine with

Rice,Chappathy,Parotta etc.

:- Serve the dish after garnishing with curry

leaves

Schezuan Prawn Spaghetti

INGREDIENTS

Prawn – 10 nos
Egg – 2 nos

Vegetables (Cut the Vegetables into thin lengthy pieces)

Carrot – 1 no
Beans – 5 nos
Brocolli – 1/2 cup
Cucumber – 1/4 cup
Capsicum – 1/4 cup
Tomato – 1/4 no

Spaghetti – 1/2 pack

Pepper Powder – 1 tsp
Garam Masala – 1/4 tsp
Soup Cube – 1 no
Tomato Sauce – 1/2 tsp
Soy Sauce – 1+1/2 tsp
Oil – 3 tbsp

Method

1) Boil the Spaghetti pieces in 3 cups of water.When it is cooked ,drain the cooked spaghetti.

2) Fry the cooked prawns in 1 tsp of oil, add a pinch of salt,1/2 tsp of pepper powder and tomato sauce for about 10 minutes.

3) Add the sliced vegetable to it and fry it for about 5 minutes,dont let the vegetables get over cooked.

4) Add 1 egg, pepper powder and salt and mix well to get scrambled egg ,at the same time the egg should mix well with the vegetables.

5) Add Garam Masala and add the cooked spaghetti to it.

6) Add the other Egg and scramble it,at the same time add the soup cube and the soy sauce, saute it properly.

7) Saute the spaghetti properly and its ready to Serve

Kerala Style Prawn Fry

INGREDIENTS

Frozen/Fresh Prawns
(Medium/Tiger Prawns) – 10/20 pieces
Ginger/Garlic – 1/2 tsp
Garlic pods (Sliced) – 4 nos
(cut lengthwise)
Onion(large) – 1 no
Green chillies – 4 nos
Curry leaves – 1 spring
Pepper powder – 2 tsp
Chilly Powder – 2 +1/2 tsp
Coriander Powder – 1 tsp
Turmeric Powder – 1 pinch
Lemon Juice – 4 tsp
Mustard Seeds – 1/2 tsp
Sliced Coconut – 1/4 cup
Oil – 3 tbsp
Salt – To taste

METHOD

Marinate the peeled and washed prawn aside, in 2 tsp of Lemon Juice and 1/4 tsp of salt.

1)Heat 1 tbsp oil in a pan and splutter mustard Seeds.

2)Add curry leaves, chopped onions, slit green chillies and fry, till half cooked.

3)Add ginger/Garlic paste ,garlic and fry it, till it turns brown.

4)Add Chilly Powder,pepper powder and Turmeric Powder and fry well, till the raw taste goes off.

5)Add prawns.

6)Add 1/2 cup water, stir the mixture slowly,close the lid and allow it to cook for about 10-15 minutes.

7)Keep stirring at regular intervals, to avoid getting it burnt at the bottom of the pan.

8) At the same time fry the sliced coconut pieces in another pan and add it to the boiling prawn masala.

9) When the prawn is almost done, pour the rest oil and allow it to fry.

10) When the masala sticks on the prawns and the mix is almost dry, Your Prawn Masala is ready to serve.

:- Serve it with Rice, Chappathi etc.

Coconut Milk – 1 Cup
Corn Flour – 2 tsp (optional)
Salt – to taste
Mustard Seeds -1/2 tsp

METHOD

1) Heat oil in a pressure cooker,Splutter the mustard Seeds and add chopped onions until they turn golden brown.

2) Add ginger/garlic paste and saute it well.

3) Add Chilly powder,Coriander powder,Turmeric powder,Chicken Masala Pwdr,Pepper Powder and saute the mixture until the raw smell goes off.

4) Add the Chicken Pieces to it ,add Coconut milk and add tomato pieces. let the pressure cooker whistle 1 time (or until the Chicken is cooked properly).

5) Add Garam masala and mix the corn flour in 1 glass of warm water and add it to the curry.Stir it slowly in low flame for 2-3 minutes.

:- Serve it after Garnishing with Cilantros.

This dish will go fine with Rice,Chappathi,Appam,Bread etc

Fish Molly

King Fish – 1 lbs
Tomato – 1 nos
Whole red chillies – 3 nos
Onion(large) – 1 no
Garlic pods – 5 nos
Pepper(crushed) – 1/2 tsp
Turmeric powder – 1/4 tsp
Green chillies – 7 nos
Coconut milk – 1 cup
Salt – As reqd
Curry leaves – 2 stems
Ginger – 1/2 inch piece
Oil – 2 tbsp
Lemon juice – 3 tsp

Coriander Powder – 2 tsp

METHOD

1)Clean the fish and cut into 1 inch pieces.

2)Crush the red chillies with garlic and keep it aside.

3)Slice the onion thinly.

4)Cut the green chillies lengthwise.

5)Chop the ginger.

6)Put the oil in a cooking pan and sauté the onions and green chillies for five minutes.

7)Then, add the crushed pepper, garlic and ginger,after a min add Coriander Powder.Saute for 3 minutes until the smell of chillies and masala come out.

8)Add the coconut milk, turmeric powder and let it boil.

9)Then, add the fish and salt. Cook well.

10)Next, add the tomato pieces and cook for 5 minutes.

11)Finally, add the lemon juice .

:- Serve after Garnishing the dish with curry leaves or coriander leaves.

:-This dish will go fine with Rice,Palappam and Bead.

Lamb Kasoori

INGREDIENTS

1) Lamb – 1/2 kg
(Sliced into small square pieces
2) Onions(chopped) – 1 nos
3) Tomato – 1/2 no
4) Ginger/Garlic paste – 1/2 tsp
5) Chilly powder – 2 tsp
6) Coriander Powder – 1 tsp
7) Turmeric Powder – 2 pinch
8) Garam Masala powder – 1 tsp
9)Meat Masala powder -1/4 tsp
10) Kasoori Methi – 3 tsp
11) Curd – 2 tsp
12)Lemon Juice – 1 tsp
13) Pepper Powder – 1 tsp
14) Corn Flour – 2 tsp (optional)
15) Salt – to taste

METHOD

Wash the Lamb pieces in the curd and put the pieces in the lemon juice and salt and keep it aside for 10 minutes.

1) Heat oil in a pressure cooker.Fry the Lamp pieces for about 10 minutes.

2) Fry the chopped onions until golden brown in another pan. Add ginger/garlic paste and saute it well

3) Add Chilly powder,Coriander powder,Turmeric powder and saute the mixture until the raw smell goes off.

4) Add the mixture to the fried lamp piece,then add tomato pieces.Pour 1/2 glass of water and also 2 tsp of kasoori methi into the cooker and let the pressure cooker whistle 1-2 times(or until the lamp is cooked properly).

5) Add Garam masala and mix the corn flour in 1 glass of warm water and add it to the curry.Stir it slowly in low flame for 2-3 minutes.

:- This Recipe will be very good if you try with Boneless chicken ,Beef or Pork.

:- Serve it after Garnishing with Kasoori Methi(Dried Fenugreek leaves).
