Mutton Roast(Thrissur Style)

INGREDIENTS

Mutton – 1 lbs (Pieces with bone)
Tomato – 1 no
Whole red chillies – 3 nos
Onion(large) – 1 no
Garlic pods – 5 nos
Ginger – 1′ piece
Pepper(crushed) – 1 tsp
Turmeric powder – 1/4 tsp
Coriander Powder – 2 tsp
Cumin Seeds – 1/2 tsp
Cumin Powder -1/4 tsp
Green chillies – 7 nos
Salt – As reqd
Curry leaves – 2 stem
Oil – 1/4 cup
Lemon juice – 3 tsp

METHOD

1)Clean the mutton and cut into 1 inch pieces.

2)Crush half portion of green chillies , Garlic,Ginger,Cumin Seeds and Mix it with the Mutton Pieces.

3) Marinate the Mutton pieces with above crushed mixture , Cumin powder, Coriander Powder,Salt,Lemon Juice and Pepper Powder , little bit of sliced Onion. Keep it aside for half an hour.

4) Slice the onion thinly,Cut rest green chillies lengthwise and Chop the ginger and Garlic.

5) Cook the Marinated Mutton pieces in pressure pan or in a normal pan.

6) Pour the oil in a cooking pan and sauté the onions and green chillies for five minutes.

7)Then, add the crushed pepper, little bit Coriander Powder,Red Chillies, tomato pieces,Curry Leaves, diced garlic and ginger. Fry for 3 minutes until the smell of chillies come out.

8)Add the cooked mutton into the mixture.

9)Saute it well for 5 to 10 mins until the oil oozes out and the mutton gets partially fried/Thicken.

:- Serve after Garnishing the dish with curry leaves.

:-This dish will go fine with Rice,Palappam and Bread.

Tuna SandWhich

INGREDIENTS

Tuna – 1 Pack/Tin
Tomato – 1/2 no:
Red Bell Pepper – 1/2 of a Big pepper or 1 medium size
Green Bell Pepper – 1/2 of a Big pepper or 1 medium size
Yellow Bell Pepper – 1/2 of a Big pepper or 1 medium size
Spinach – 1 or 2 leaves chopped (Optional)
Lettuce – cut in the shape & size of a bread
Onion – 1 medium size
Mayonnaise – 3 tbsp
Oil – 1 tsp

White Bread or Wheat Bread

For Seasoning

Salt & Pepper – to taste

METHOD

1) Wash the tuna chunks and keep it aside to drain.
2) Chop all the vegetables other than leaves to small cube like pieces.
3) Heat the oil in a pan and add the chopped onion, saute it for few seconds in medium flame.Dont overcook the onion.
4) Add the diced bell peppers, tomatto and spinach. saute it slowly for a minute, dont overcook and spoil the fresh feel of the vegetables.
5) Add mayonnaise to the mixture and mix it well.
6) Add salt and pepper to taste . Saute it well for 1 minute and keep this mixture aside.

5) Take the toasted or normal bread slices and place a bread shaped lettuce and spread the mixture on it and place another bread slice on top of it and ur Tuna Sandwhich is ready to serve.

:- I used Wheat bread because its more healthy and have less calorie than normal white bread. But White Bread will be more tasty.
:- It will be tasty even if you dont use lettuce inbetween the bread slices.
:- You can add more mayonnaise if you like mayonnaise taste.

Kerala Style Chakka Ella Ada

INGREDIENTS :

Rice flour – 2Cups
Coconut Oil – 1tsp +3tsp
Grated coconut – 1 1/2Cup
Jaggery – 200g
Ghee – 2tsp
Cardamom Powder – 1tsp
Kissmiss
Jackfruit Halva or ripe jack fruit sliced – 1/2 cup
water – as required for preparing a thick batter
Salt – 1/4 tsp
Sugar – 1/4 tsp
Banana Leaf without central strip or Aluminium Foil

METHOD

1. Mix the Rice Flour with salt, sugar and 1 tsp of grated coconut.Add boiling water to the mix, and carefully stir well with a spoon.

2. When it turns warm, mix the dough with hand(preferably) and keep aside.

3. For filling of the Ada,in another pan mix the grated coconut with the grated jagery,jackfruit halva or sliced jack fruit and cardamom Powder.

4. Now on banana leaf or aluminuim foil spread coconut oil. From the dough take a handful spread it on banana leaf. If you find difficulty in spreading the dough dip your fingers in water and then try to spread again.

5. Spread 2 spoonfull of filling on it and fold the leaf carefully. Press the sides of the ada and carefully to seal it and place them in a steamer.

6. After 15 minitues ada will be completely cooked. To check whether its completely done, you just try to remove the sides of the leaf from ada. if its coming out clean, then ada is done and you can enjoy a sweet breakfast.

Pallappam

Palappamsmall

INGREDIENTS

1) Long grain Rice – 3 cups
2) Cooked rice (Choru) – 1 cup
3) Coconut milk – 1 cup
4) Salt -1 tsp
5) Sugar – 2 tsp
6) Yeast – 1 tsp
7) Luke warm water – 1/2 cup
8) Milk – 1/4 cup
9) Water – As reqd

METHOD

1) Dissolve yeast in lukewarm water and add 1 tsp sugar. keep it aside for about 15 mins. Till it ferments.

2) Grind together long grain rice and cooked rice very well with coconut milk and enough water, to make a batter of somewhat thick consistency.

:- Make sure not to make the batter too watery.

3) Pour this in a vessel.

4) Add fermented yeast to the batter and stir it well.

5) Place this in a warm place overnight for fermentation to make nice and soft appam.

6) Add salt and milk and mix well.

7) Make appam on an Pallppam Chatti.

:- Serve appam hot.

Chakka Kumbulappam

INGREDENTS

1) Jackfruit Jam (chakka Vazhattu) – 1 Cup
2) Rice flour – 1 Cup,
3) Coconut bits – 1 tbsp,
4) Jaggery (melted to a thick sauce) – 1/2 lump
5) Cardamom powder – 1/4 tsp
6) Salt – 2 pinchs
7) Bay Leaves or Vazhana Illa – 6 to 7 nos

METHOD

1) Mix them all together to a soft dough.
2) Fill them into Vazhana leaf cones, and secure with the leaf tip.
3) Steam in the pressure cooker for 3 whistles.
4) Remove from fire, open the cooker lid.

:- if flexible Bay Leaves or Vazhana Illa are not available for making cones, u can try with alluminium foil. But dont forget to add crushed bay leaves to the dough and fold it in the aluminium foil in a corn shape.

:- Jack fruit jam is the mixer of jackfruit and jagerry.

Easy Apple Jam

Easy apple jam recipe

INGREDIENTS

1) Apples cleaned & Sliced – 2 kg
2) Lemon Juice – 3 tsp
3) Sugar – 1 1/5 kg
4) Ghee – 4 tbsp
5) Cinnamon (optional) – 1 tbsp
6) Orange/Red Colour (optional) – 3 or 4 drops

METHOD

1) Wash, clean and chop apples and put them in the water with 2 tsp of lemon juice.

2) Grind the sliced apples into a fine paste.

3) Pour 1/2 kilogram of sugar and half ghee into the apple paste and cook them till apple softens.

4) Pour rest of the sugar and ghee in boiling apple mix and cook it for 10 minutes more.

5) Add the rest lemon juice, colour and stir until we get a thick consistency.Add cinnamon into it and remove them from the heat.

6) Allow it to cool for about 15 to 30mins.Pour warm jam into a clean and sterlized jam jars.

:- Dont add water to it.

:- Serve it with Bread,Bagels etc.

Uppumavu

INGREDIENTS

Rava – 1 cup
Green chillies – 4/5 nos
Ginger – A small piece
Onion(medium) – 1 no
Mustard seeds – 1/2 tsp
Curry leaves – 2 stems
Turmeric powder – 1/4 tsp
Salt – As reqd
Coconut oil – 3 tbsp
Cashew – 6/7 nos
Raisins – 7 nos

METHODS

1)Chop onion, chillies and ginger.

2)Take a vessel or pan and heat rawa,Saute till it becomes golden brown.

3)Heat oil in a pan or a kadai.

4)Splutter mustard seeds.

5)Add onion, green chillies, ginger, curry leaves and saute for 5 mins.

6)Add 2 glasses of water into this along with turmeric powder and salt.

7)Let the water boil.

8)When it boils, add the fried rava into it and stir it continously for 3-5

mins.

:- Do not make it dry, add boiled water if you want to make it loose..
its more tasty when its not dry…

:- Serve hot.

:- If you want, you can add cashews and raisins. Those who have cholesterol better avoid cashews.

Kadala Curry

INGREDIENTS

Kadala – 1 cup
Ginger/Garlic paste – 1/2 tsp
Onion – 2 nos
Coriander powder – 1 tsp
Chilly Powder – 2 tsp
Chicken Masala powder – 1/2 tsp
Garam Masala Powder – 1/4 tsp
Turmeric Powder – 1/8 tsp
Salt – to taste
Tomatoes – 1 nos
Corriander Leaves – 1 stem
Mustard Seed – 1/2 tsp
Oil – 1 tbsp

METHOD

1) Cook channa with salt in a pressure cooker.

2) Heat oil in a pan,sputter mustard Seeds.

2)Add ginger and garlic paste and stir till brown.

3)Add chopped onions and stir, till onions are cooked.

4)Add coriander powder,Turmeric Powder,garam masala powder,Chilly Powder,Chicken Masala powder and stir, till the smell of masala powder comes out.

5)Add chopped tomatoes stir well, till the tomatoes blend well.

6)Add the cooked channa or Kadala to the masala.

7)Add salt and stir well.

8)You may add more water, if required.

9To make the gravy thick add corn starch to the curry this is optional.

Easy method for cooking Kadala

1) Cook the Channa along with all the ingredients in a pressure cooker and when the gravy become thick.

2) Add the sputter mustard seeds and fried Onion to the Curry as garnishing.

:- Serve it after garninshing with curry leaves or cilantros.

:- This dish will go fine with Puttu,Appam,Palappam,Iddiyappam etc.

Sweet Rice Balls (Kozhukatta)

INGREDIENTS

1) Rice Flour – 1 cups
2) Grated Coconut – 4 tSP
3) Hot Water – 1/4 Cup
4) Salt – 1/4 tsp
5) Oil – 2 tbsp

For making the Core of Kozhikatta

Sweet Coconut Mixture

1) Grated Coconut – 1/2 Cup
2) Grated Jagery – 1/2 Cup
3) Cardamom Powder- 1/2 tsp

PREPARATIONS:

1) Sift together Rice flour, and salt.
2) Mix all the Ingredients and make it a soft dough (similar to chappathi dough).I added Oil to make the dough soft.Keep it aside for 5 to 10 mins
3) In another pan mix Grated Coconut, Grated Jagery, Cardamom Powder properly.
4) Now make small balls of lemon size from the dough,roll it with ur hand and make small patties.
5) In the center of the patties keep 1/2 tsp of the Sweet Coconut Mixture and seal it. Again roll it properly.Dont let the mixture to come out of the dough while rolling or sealing.Keep the Balls aside.
6)Now cook the Balls in a pressure pan or idilli pan.

:- Dont cook the Balls by boiling it in water. It should be cooked in the similar way as Idilli is cooked.

:- You can make Sweet Coconut Mixture by using Sugar instead of Jagery.

Serve it hot.

Idilli

INGREDIENTS

Raw Rice(Pachari) – 1 cup
Black gram(Uzhunnu) – 1/2 cup
Dal (Thuvara parippe) – 3 tbsps
Cooked Rice – 5 tbsps
Salt – 1 tsp
Oil – As reqd

METHOD

1)Wash and soak rice,Black Gram,Dal separately for few hours.

2)Grind Raw rice, dal,black gram and cooked Rice adding required quantity of water.

3)Add salt to taste ,stir well to form a loose batter.

4)Keep it overnight to ferment.

5)Pour one spoon full of batter on a greased idilli pan .

6)Allow it to cook well for about 10-20 mins. Check whether the idilli is cooked by inserting a thin knife or with a tooth pick.

:- Idilli is ready to serve if it is all set. Serve it hot with Chutneys ,Sambar,Chicken Curry,Chicken Fry or with Potato Chutney.
