INGREDIENTS
1) Carrot – 3 Nos
2) Grated Cocconut – 1/2 Cup
3) Chilly Powder – 1/4 tsp
4) Cumin Seeds – 1/2 tsp
5) Mustard Seeds – 3/4 tsp
6) Green Chilly – 5 nos
7) Turmeric Powder – 4 pinch
8) Shallots – 5 nos
9) Garlic Pods – 4 nos
10) Curry Leaf – 1 stem
11) Oil – 2 tsp
12) Salt – to taste
DIRECTIONS
1) Heat the oil in a pan. Add mustard seeds ,allow it to splutter.
2) Add the finely chopped Carrot to the oil.Saute it for about 5 minutes.
3) Grind the Grated Coconut,turmeric powder,cumin seeds,Garlic Pods,Green Chilly,Shallots and Chilly Powder in another pan.
4) Add the grinded mixture to the Carrot in heating pan.
5) Add 1/4 cup of water to the pan and saute it well for about 2 mins and close the pan with a lid and leave it for about 15 mins.
6) Add the curry Leaves.
7) Stir well till all water evaporates.
:- Serve the dish after garnishing with Curry Leaf Stem.
This dish will go fine with Rice.
