capsicum fry

INGREDIENTS

Capsicum – 2 nos
All Purpose Flour (Maida) – 4 tbsp
Baking Powder – 3 pinch
Chilly Powder – 1/2 tsp
Pepper Powder – 1/2 tsp
Soy Sauce – 1 tsp
Oil – as required for deep frying
Salt to taste

METHOD

1) Wash and Slice the capsicum in circular pieces.

2) Seave Maida,baking powder together in another pan, add chilly

powder,pepper powder,soy sauce,salt along with water.

3) Stir well to form a semi thick batter.

4) Dip the sliced Capsicum pieces into batter and deep fry the pieces in

oil.

5) Allow it to fry till it turns Golden Colour.

:- Serve it Hot.

Cashew Roast

INGREDIENTS

1) Cashew (unsalted) – 1 cup
2) Sugar – 1/2 Cup
3) Cardamom Powder – 3 to 4 pinch (Optional)

METHOD

1) Heat a metalic pan ,boil the sugar in the pan ,the sugar will start to melt and turn liquid around the edges.

2) When it is slight brown in colur at same time it should have sweet taste dont let it charred away and have bitter taste.

3) Add the Cashew to it and mix well without breaking the cashews ,at the same time the sugar syrup should cover the cashews.

4) Sprinkle the cardamom powder.

5) Separate the Cashews without breaking when it is cooled.

Honey Brocoli Stir Fry

INGREDIENTS

1) Broccoli – 1 stem or 1/2 kg
2) Soy Sauce – 2 tbsp
3) Cornflour – 1+1/2 tsp
4) Ginger Paste – 1/4 tsp
5) Honey – 2 tbsp
6) Sugar – 1 tsp
7) Pepper powder – 1/2 tsp
or hot pepper sauce if available
8) Oil – 3 tbsp
9) Salt to taste

METHOD

1) Wash broccoli and cut off broccoli flowerets.

2) Slice stems 1/4 inch thick lengthy pieces.

3) Heat oil in a pan ,stir-fry broccoli 5 minutes until crisp-tender.

4) In small bowl, mix soy sauce and cornflour and 4 tbsp water.

5) Add honey, ginger paste and pepper powder or hot pepper sauce.

6) Pour the above prepared mixture over fried broccoli and add salt.

7) Cook until sauce thickens slightly.

:- Dont add too much salt because its a sweet dish. You can add more Sugar or Honey if u need ur dish to be more sweet.

:- This dish will go fine with Chinese White Rice.

Cherry Wine

INGREDIENTS

Cherry – 1 kg
Sugar – 1 kg
Yeast – 1+1/2 tsp
Bolied and Cooled Water – 12 bottle
Chrushed Wheat – 3 tbsp (optional)

To Make Carmel Syrup

Sugar – 2 Cups
Water – 1 cup

Boil the sugar in a metalic pan ,the sugar will start to melt and turn liquid around the edges. When it brown in colur at same time it should have a sweet taste dont let it charred away and have bitter taste.

METHOD

GENERAL INSTRUCTIONS

Mix yeast in one cup of water along with 1/2 tsp sugar and keep it aside for 20 minutes

1) Wash fruit, Remove SeedS.

2) Chop,smash,or crush the fruit.

3) Mix the chrushed cherry along with the sugar. Stir it well and keep it closed in a tightly closed plastic pan or Clay pot (Bharani) for 1 day.

4) Add water , formy yeast water that we have kept aside, chrushed wheat if available.And keep the pot tighly closed with lid and a with cloth covering the lid with a rubber band ,so that wine doesnt get spoiled with small ticks.

5) Stir it once in every 2 days, this stiring allows the carbondioxide to escape and taste the wine, if the sugary taste is not there,then add more sugar.Keep the mixture closed for about 21 days.

6) On the 21st day filter the sediments from the wine with a cloth into a pan ,then add the caramel syrup and stir it well.

7)Now wine is Ready to drink, keep it in a bottles which are completly dry, without having any water content.

:- You can try same recipe with Red Grapes or Black Grapes, Apple.
For Apple you can avoid adding caramel syrup.

Tandoori Chicken

INGREDIENTS

Chicken – 1/2 kg
Cut into Medium Size Pieces.

For marination
Ginger/Garlic paste – 1 tsp
Vinegar – 1 tbsp
Lime juice – 1 tbsp
Curd – 2 tbsp
Chicken masala – 1 tsp
Garam Masala – 1/4 tsp
salt – acc to taste.

Oil -3 tbsp

METHOD

1) Wash the chicken and make small incisions on it (with fork or knife) and set it aside in a bowl for draining.

2) Add ginger garlic paste and all the above mentioned ingredients for marination.

3) Stir it properly so that the masala mix up well then add the chicken pieces and mix it properly.

4) Keep the marinated pieces for about 1 to 2 hrs for proper marination.

5) Then fry the pieces in a greasy pan. Fry till it turns brown.

Can add a pinch of Red color powder if needed.So the pieces will get Red Colour.

This Dish Will go fine with Rice,Chappathi,Parotta etc.

Kheema Balls in Coconut Milk

INGREDIENTS

Minced Meat (kheema) – 1/4 kg
or minced Susage (Uncooked) – 4 nos
Ginger/garlic paste – 2 tsps
Green chilly – 5 to 7 nos
Cumin seeds – 1/4 tsp
Turmeric pOwder – 1/4 tsp
Red chilly powder – 3 tsp
Oil – 2 1/2 tbsps
Grated dry coconut – 1/2 cup
Onion – 2 nos
Garam masala powder – 1 tsp
Coconut milk – 2 cups
Meat Masala Powder – 1/4 tsp
Kasoori Methi – 2 tsp
Corriander powder – 1/2 tsp
Tomatto medium – 1 no
salt to taste

METHOD

1) To prepare the Keema Balls, first clean meat in cold running water and drain well.

2) Add half of the chopped green chillis, half of the garam masala pwd,cumin seeds, salt, turmeric pwd, 1 tsp ginger garlic paste to the kheema.

3) Mix well and grind to blend all the ingredients. Remove and prepare small lemon sized balls (Wet your hands while preparing the kheema balls so that they don’t stick to your hands).

4) To prepare the gravy, heat a tsp of oil in a pan and add the dried coconut and sauté for a few mts till it turns brown.

5) Add another tbsp of oil and add the sliced onions and sliced tomatoes and fry till they turn golden brown.

6) Add half portion of the rest garam masala,turmeric powder,chilly powder,corriander powder,meat masala powder,Remove from fire and keep aside to cool. Grind to make a fine paste.

7) Heat 1 tbsp oil in a cooking vessel and add the ground paste and cook for a few mts till it turn brown. Add the remaining ginger garlic paste, green chillis, red chilli pwd, salt and 1 cup coconut milk and combine well. Allow it to boil.

8) Add the kheema balls and remaining cup coconut milk to the gravy and cook them covered on low flame for 20 mts.

9) Add the remaining garam masala pwd,meat masala powder.Cook for another 10 mts on low flame.

:- Serve hot after garninshing with Methi Leaves.

:- This dish will go fine with Chappathi, rice.

Beef – 1/2 Kg
soy sauce – 1 tbspn
vinegar – 1 tbspn
Ginger garlic paste – 1/2 tspn
Coriander powder – 1 tspn
Chilli powder – 2 tspn

turmeric powder – 1/4 tspn
Corn flour – 1 tbspn
Salt – to taste
Oil – 4 to 5 tbsp
Kasoori Methi – few for Seasoning
Green chillies – 4 nos
Onion – 1 no

METHOD

1) Heat a pan ,add 1 tsp oil .

2) Add the beef pieces and turmeric powder.The beef will leave water and till it changes its texture and colour up within few mins .Saute it medium Flame ,for about 5 to 10 mins .

3) For Marinating the partially fried beef pieces ,add ginger/garlic paste, soy sauce,vinegar,coriander powder,garam masala powder,chilli powder,salt mix it properly along with the beef pieces and leave it for atleast 30 mins .

4) Cook the beef pieces in a pressure cooker for about 5 minutes. Add the corn flour and saute it well.

5) Heat oil in a frying pan, add the sliced Onion and sliced green Chillies ,saute it till it turns brown and add the cooked beef .Saute it till it turns dry.

:- Serve it hot.

Prawn65

INGREDIENTS

Prawns – 20 (medium)
soy sauce – 1 tbspn
vinegar – 1 tbspn
Ginger garlic paste – 1/4 tspn
Coriander powder – 1/4 tspn
Chilli powder – 1/4 tspn
garam masala – 1/4 tspn
turmeric powder – 1/4 tspn
Corn flour – 1 tbspn
Egg white – 1 no
Salt – to taste
Oil – 4 to 5 tbsp

For seasoning

Curry leaves – few
Green chillies – 2 to 3

METHOD

1) Heat a pan ,add 1 tsp oil .

2) Add the prawns and turmeric powder.The prawns will leave water and will get coiled up within few mins .
Saute it until the water dries up in a medium Flame.

3) For Marinating the prawns ,add ginger/garlic paste, soy sauce,vinegar,coriander powder,garam masala powder,chilli powder,salt mix it properly along with the prawns and leave it for atleast 30 mins .

4) Mix the egg white and corn flour to the prawns and leave it for 5 mins

5) Heat oil in a frying pan, fry the prawns .

6) When the prawns are almost fried,heat abt 1/4 tspn of oil in to the pan and add the curry leaves,sliced Onions and the green chillies cut lengthwise saute for few secs .

:- Serve it hot.

Bull’s Eye

1) Heat the Oil in a pan ,Pour the Egg without causing any damage to the Egg Yolk into the pan.
2) Wait for 4 to 5 mins till its almost done.
3) Sprinkle Pepper Powder and Salt to it.

Paneer Cake

Paneer – 1 pack or made out of 1/2 gal milk
Sugar – 1 + 1/2 Cup
Baking Powder – 1/2 tsp
All Purpose Flour – 1 Cup
Vanilla Essence – 2 tsp
Egg – 1 no
Water – 1/2 cup
Ghee – 3 tsp
Cashews – 10 nos
Raisins – 10 nos

METHOD

How to Make Paneer?

Ingredients Needed For Paneer

Milk – 1/2 Galon
Lemon Juice – 2 Tsp

Method

1) Heat milk in a pan and bring it to boil. Remove from heat.
2) Add lemon juice to the milk.
3) Stir slowly and gently until white curd forms on the surface and separates from milk.
4) On straining this milk, the curd that is obtained is called “paneer”. Wash paneer well under cold running water and twist the cloth that was used for straining to extract water.

For preparing Cake

1) Mix Paneer,All purpose flour,vanilla,Egg,Sugar,Baking Powder and water in a grinder for about 2 or 3 minutes.
2) Grind till we get a smooth batter.
3) Preheat the oven to 350 F .

4) Grease the bottom and sides of the baking pan with oil and spread some all purpose flour on it.

5) Pour the batter into the pan and spread the raisins and cashews on top.

6) Bake until a stick which is inserted in the center part of the cake comes out clean.It will take around 20 – 30 minutes.

6) Cool the Cake before removing from the pan.

:- Serve it when it is cool.
